Easy buckwheat porridge, made with just 3 ingredients in less than 10 minutes. It's a super satiating, gluten-free, breakfast recipe. Feel free to add your favorite toppings! Buckwheat flour is one of my go-to gluten-free flours and as you can see on the blog, I use it a lot.

Add buckwheat into a large bowl or mason jar and cover with water, covering at least 1" above the groats. Let soak for 2 hours or up to overnight. Once soaked, drain and rinse buckwheat groats and add them to a high powered blender. Add remaining ingredients in the order listed and blend on high until smooth and creamy.

To make porridge, roasted buckwheat is rinsed and cooked in a saucepan with water under a lid until the water is fully evaporated and absorbed, and the buckwheat is softened (just like rice!). Then it's mixed with milk, and some sort of sweetener. Jazz it up with your favorite toppings like fresh fruit, seeds, nuts, and nut butters. It's so simple!

1. Heat a dry frying pan over a medium high heat and toast the oats until fragrant. Put the oats in a medium saucepan along with the milk and 1 cup (about 200ml) water and bring slowly to the boil.
